Snickers Bites
While I have a sweet tooth, I have found ways to not only make sure I’m not stuffing my face with the synthetic, highly processed sweets of my youth, like these Snickers Bites. Made with dates and few other ingredients not only more than satisfy, but don’t spike glucose levels. Since they are void of those chemicals that are designed to make you crave MORE and MORE, you can enjoy one…maybe 2 and walk away completely satisfied.
Ingredients
6 large pitted Medjool dates, cut in half (or 12 small)
12 teaspoons peanut butter
1/4 cup dry roasted peanuts, roughly chopped
1 1/2 cup dark chocolate chips
1 teaspoon unrefined coconut oil
Flakey Maldon Sea Salt
Method
There are 2 ways to make these snickers bites. I like the way I have shown best as they are the least messy to eat. I used a silicone mold with 1 inch cups.
Melt half the chocolate and coconut oil in the mircowave in 30 second intervals. It should only take about 2 rounds. Stir between each interval until chocolate is fully melted. Pour the chocolate into the bottom of each cup until its just covered. Once all are filled, gently roll the chocolate along the sides to cover them as well. Place in the freezer for about 5 minutes until chocolate has hardened.
Take out of the freezer and add half a large date or 1 small date, pulled open at it’s seem. Place one in each cup. Then add 1 teaspoon peanut butter inside each date…it’s totally fine if it oozes out. Sprinkle with a few chopped peanuts.
Melt the remaining chocolate in the same fashion and cover each cup to the top. Sprinkle with peanuts and sea salt.
Put it back in the freezer and let set for at least 30 minutes. Store in an airtight container in the freezer.
For the second method you will just need a small baking sheet and some wax paper. The method is pretty much the same expect you fill the dates with peanut butter first. Sprinkle with peanuts and then dip in the chocolate. Sprinkle the top with more peanuts and sea salt and freeze to set. Store in an airtight container in the freezer.
