Strawberry & Cherry Crumble

It’s that time of year again- fresh berries for the picking! If I can’t make it to the local farm when the berries are ready to pick, I know a great farmer who sells them at our local Saturday market. These organic strawberries are simply the BEST and if you have ever tasted a fresh, local, organic strawberry, you’ll never want anything else!

This recipe is GREAT because it is simple to make, and you can mix up the fillings so that the fruit is what you have in season. (stay tuned for more variations through the year) I pair mine with So Delicious Coconut Milk Vanilla Bean ice cream. It’s so good and Brendan will even try to steal some of mine. So grab some local organic berries and serve up this tasty twist. The only sugar you will find is from the fruit itself and the honey. Eating delicious doesn’t mean it has to put you into a sugar coma!

This smelled so delicious straight out of the oven I had to try a bite before serving it up!

Ingredients

  • 3 cups organic strawberries, washed and halved

  • 2 cups frozen organic cherries (fresh when in season)

  • juice and zest of one medium lemon

  • 2 tablespoons raw honey

  • 2 teaspoons tapioca flour

    Crumble Topping

  • 1 1/2 cups gluten-free oats

  • 3/4 cup raw pecans, pistachios, or almonds

  • 1 tablespoon cinnamon

  • 1/2 teaspoon salt

  • 1 tablespoon unrefined coconut oil

  • 1 teaspoon almond extract

  • 1 tablespoon vanilla extract

  • 2 tablespoons raw honey + more for drizzling on top

Method

Preheat the oven to 350 degrees.

Wash and half the berries and cherries. Place in a pan on medium-high heat and allow them to cook down for about 5 minutes. Add the honey, lemon juice, and zest, and continue to cook down for 5-8 minutes. Add the tapioca flour to thicken simmering for a few more minutes. It will still seem a bit runny and that is okay. Pour into a pie pan or small baking dish. (mine is 9x6)

Add all the crumble ingredients into a food processor and pulse until combined. Pour on top of the berry mixture and drizzle with honey. Cover with foil and bake for 15 minutes. Remove the foil and continue baking for 10 minutes until the berries are bubbling and the top is golden brown. Let cool and top with your favorite ice cream!
