Pumpkin Spice Granola
Yields about 10 cups
Pumpkin spice and everything nice! I LOVE ME SOME HEALTHY PUMPKIN SPICE OPTIONS.
Ingredients
2 cups GF SPROUTED oats
3 cups of your favorite raw, unsalted nuts - roughly chopped ( I use pecans)
1/3 cup SPROUTED pumpkin seeds
1 tablespoon cinnamon
1 tablespoon pumpkin spice
1/2 teaspoon sea salt
2 tablespoons pure maple syrup
1/4 cup + 2 tablespoons coconut oil, melted
1 tablespoon molasses
Add for the last 3 minutes of baking:
1/3 cup unsweetened shredded coconut
Add after it has cooled completely:
1/2 cup organic raisins (Get creative here! No sugar-added cranberries, chopped dried apricots, and cherries would all be tasty!)
Directions
Preheat the oven to 375 degrees (if you have a convection oven - 350 degrees)
Combine the dry ingredients, minus the raisins and coconut, in a large bowl.
Add in the wet ingredients and combine until all is well covered.
Pour on a parchment-lined baking sheet.
Bake for 20 minutes.
Remove from oven and sprinkle the coconut on top and bake for an additional 2-3 minutes until slightly browned.
Let the granola cool to the touch and add the raisins and mix it all together. Store it in an airtight glass container for up to a month….if it lasts that long. 😉
