Simple & Healthy Granola

So I had created this recipe originally for the holiday and for Christmas gifts. But it is so delicious, simple and easy to make (not to mention saves money too) that we’ve been making it every month since!

However, since I read some new research on the side effects of heating honey and its link to inflammation (YIKES! What I’m trying to avoid!) So along with swapping that for a little bit of pure maple syrup and reducing unrefined coconut oil and molasses, I have made the recipe even better for you! Check out the updated recipe below. It’s a little bit less sweet, but still totally perfect for that topping and crunch you want on your yogurt and fruit parfait, smoothie bowl, or just as an afternoon snack.

This is a quick and simple granola for the holidays. Enjoy it as a snack or a topping or better yet, make extra and give it as a gift!

Ingredients

  • 2 cups GF oats

  • 3 cups of your favorite raw, unsalted nuts - roughly chopped ( I use pecans)

  • 1.5 teaspoons cinnamon

  • 1/2 teaspoon sea salt

  • 2 tablespoons pure maple syrup

  • 1/4 cup + 2 tablespoons coconut oil, melted

  • 1 tablespoon molasses

Add for the last 3 minutes of baking:

  • 1/3 cup unsweetened shredded coconut

Add after it has cooled completely:

  • 1/2 cup organic raisins (Get creative here! No sugar-added cranberries, chopped dried apricots, and cherries would all be tasty!)

Directions

Preheat the oven to 375 degrees (if you have a convection oven - 350 degrees) 

Combine the dry ingredients, minus the raisins and coconut, in a large bowl.

Add in the wet ingredients and combine until all is well covered.

Pour on a parchment-lined baking sheet.

Bake for 20 minutes.

Remove from oven and sprinkle the coconut on top and bake for an additional 2-3 minutes until slightly browned.

Let the granola cool to the touch and add the raisins and mix it all together. Store it in an airtight glass container for up to a month….if it lasts that long. 😉
