Taco Tuesday

Did someone say Taco Tuesday?!

It’s become a tradition in our house and while we tend to create new varieties each week, this is a great go-to and a great place to start. It’s simple, a crowd pleaser and you’ll find with a simple switch of changing your brands and quality ingredients, you’ll taste the difference and still find ways to enjoy your favorite foods.

And before you ask, this is not an affiliate post. We love these brands as they make it easy to make healthy eating choices.

Ingredients

Taco Filling

  • 1 lb. ground chicken/turkey/grass-fed beef

  • 1/2 organic onion, diced

  • 1-2 garlic cloves, minced

  • Siete taco seasoning ( I love the carnitas seasoning mix with ground chicken or turkey, or a combo of the mild and spicy with ground beef)

Spicy Beans

  • 15 oz. Pinto or black beans (drained and rinsed)

  • 1 teaspoon avocado oil

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • Salt & pepper to taste

Toppings

  • Guacamole

    • 1-2 small avocados

    • 1/3 cup fresh pico(see recipe below)

    • 1 lime, juiced

    • 1/2 orange, juiced

  • Pico de Gallo

    • 10 oz. cherry tomatoes, diced (I got an heirloom variety)

    • 1/2 medium onion, diced

    • ¼ cup cilantro, minced

    • ½ jalapeno, minced (seeds removed if you want it less spicy)

    • juice of 2 small limes

    • 2 cloves of garlic, minced

    • Salt and pepper to taste

  • Lettuce, shredded

  • Tomatoes, chopped

  • Chopped green onions

  • Shredded Cheese (preferably a brand like Tillamook - a B Corp, or at least organic)

  • Siete hot sauce

  • Avocado slices if not making guac

  • Cucumber slices (adds even more freshness and crunch to the whole experience)

Tortillas

I love to make my own. I’ve found they are easy and so delicious. I get the Ottos’ Cassava Flour mix and use that recipe to make mine. This time around, I was running low so I mixed their cassava flour with coconut flour and they were so delicious! If you prefer to buy yours and save time, grab Siete’s hard or soft shells. The soft shells are in the freezer section at most grocery stores.

Be aware if buying other tortillas - corn or flour. Look for sprouted grains as they digest better for you and AVOID all brands that use vegetable oils! They are an inflammation trap! Sprouts, Trader Joes, Whole Foods and Natural Grocers all carry great store brands.

Method

MEAT: Heat a large sauté pan to medium-high and begin to brown the meat in the pan. Break it up as it cooks, until no pink remains. Drain your meat of excess oil. Add in diced onion and garlic and cook until translucent. Season with salt & pepper to taste. Follow packet directions for Siete spice mix. (Basically add the packet and water, set on low to let simmer.) You can do this and let it simmer for a few hours if you want to make something in advance.

BEANS: In a small pan, add oil and heat to medium-high. Add the drained beans and spices and let simmer until you’re ready to eat.

PICO: Dice all ingredients and season with salt and pepper. Super easy to make the day before. If you want less chopping, pull out your food processor - this will make more of a salsa. Totally preference here. Do what works for you.

GUAC: Smash your avocados and add the citrus juices. Add in your pico or salsa and gently fold to combine.

Prep all your toppings and get ready to serve up your tacos!
