Sweet Potato Wedges

I LOVE Sweet Potato fries… probably more than I want to admit. I could eat them daily! But I don’t. Before my air fryer, I spent countless hours trying to perfect this recipe adding on time and hastle. Now they are so easy to make, crispy on the outside and pillowy soft on the inside, that it’s a no-brainer if looking for a simple and delicious side dish the whole family should love.

I was the LAST to invest in an air fryer and can’t believe we waited as long as we did. This is a game-changer for sure. Plus we go ours as air fryer/toaster oven and its one of our most used kitchen appliances.

Ingredients

  • 1 medium sweet potato

  • 1 teaspoon avocado oil

  • dash of salt and pepper

  • 1 tablespoon fresh rosemary or 2 teaspoons dried (dried Italian Seasoning works too)

Method

Wash your sweet potato(es). The skin has so many nutrients so if you can, keep it on. If its too spotty or you don't like the texture, peel away!

  • Slice the potato in half, lengthwise. Then continue in 1-inch slices. Place them in a medium-size bowl

  • Drizzle the oil and spices over the wedges and toss to evenly coat,

  • Air fry at 350 degrees for 12-14 minutes, flipping halfway.

  • ENJOY!
