The Secret ingredient to brighten up any salad

I had to add at least one Summer Salad to the mix! Summer salads are my personal favorite because of the brightness of flavors you get with the fresh ingredients. But there is a secret ingredient that so many people tend to forget. FRESH HERBS! They are the star ingredient.
Honestly, it’s easy to look at this salad and think the peaches or blackberries that are in season are the bright spots - and they don’t disappoint. But don’t overlook fresh herbs, especially Basil. There is something about the aroma of the basil as you begin to take a bite that heightens your senses and takes these fresh ingredients to a whole new level. Plus, it pairs so well with peaches, berries, goat cheese, and pistachios.
So give this salad a whirl! You can use one of my favorite dressings, like Primal Kitchen Honey Mustard or use my homemade Honey Mustard Dressing - which is super tasty, easy, and simple.
Ingredients
Grilled Lemon Chicken
1 pound cooked organic chicken breasts (ideally humanely raised)
1 organic lemon, juiced and zested
1 tsp dried Thyme
Salt and pepper to taste
1 teaspoon avocado oil
Peach and Blackberry Salad
5 oz organic spring mix or spinach
1 pint organic blackberries, sliced
2 medium peaches, peeled and diced (the peaches should ideally be ripe, but still firm)
1/4 cup pistachios, roughly chopped
2 oz plain goat cheese
Method
While the grill is heating, let marinade with lemon, herbs, salt, pepper, and oil. We have a pellet grill and cook our chicken at 425 for 15-20 minutes depending on thickness. Let rest for 5 minutes before slicing.
Wash and prepare the produce.
Combine all ingredients and serve.
