Smashed brussels Sprouts
Serves: 3-4 Total Time: 40 minutes
Brussels sprouts seem to be the new craze as an app! You see them everywhere at all types of restaurants. I couldn’t imagine eating them as a kid and am not entirely sure they were even offered. But they are a staple in our home. Usually, a simple roast on high heat does the trick.
But then I stumbled across a recipe for SMASHED Brussels and there is something about this process that takes them over the top!
And don’t worry about that time! Most of it is boiling and roasting. You can easily multi-task with this recipe!
Ingredients
1 pound Brussels sprouts
Nutritional Yeast
Everything But the Bagel Seasoning
Salt
Pepper
1 tsp Ghee
AND for dipping: Primal Kitchen’s Vegan Ranch Dressing
Method
Preheat the oven to 450 degrees.
Rinse the sprouts and cut off the ends.
Fill a large pot with about 2 inches of water. Add a colander and bring to a low boil. Steam the sprouts for about 10-15 minutes or until they are easy to pierce with a fork.
Toss in a bowl with seasonings and ghee. Use your preference here on seasonings, but my favorites are listed above.
Place each sprout on a lined baking sheet. Using the bottom of a glass, smash each sprout down. Bake for 15-20 minutes until they are crispy. Feel free to broil for a few minutes to finish if you want them extra crispy!
