Mediterranean Garden Salad

 Servings: 2-4    Time: 5 minutes

I am obsessed with this SALAD. It’s light and fresh and packed full of flavor! It is also extremely versatile! Mix it with what you have on hand. Add some grilled chicken or quinoa to make it a full meal. Add it to a wrap. The possibilities are endless.

Ingredients

1 medium cucumber, peeled and diced

1 large tomato, diced

1 handful of cherry tomatoes

¼ cup cilantro

8 kalamata olives

⅛ cup feta cheese

¼ cup Primal Kitchen Cilantro Lime Dressing

Dash of salt and pepper

Method

Slice, dice, and combine! This salad is super easy and such a perfect bite on a summer day!

If you don’t have that dressing, use fresh limes, more cilantro, fresh garlic, and avocado oil!
